Don't Be a Wuss About These Twelve Raw Egg Cocktails

When Eater asked Drink & Tell: A Boston Cocktail Book author Fred Yarm if he had any advice for finding a quality drink, he said to focus on cocktails featuring eggs. In his own words: "Try to step outside your comfort zone... try some egg drinks. A bartender knows that if they put an egg drink [on the menu] they're focusing to someone who wants something a bit more challenging." Well, this should make that pretty easy. Without further ado, here are twelve cocktails in the Boston area featuring raw egg.

Pisco Sour at Machu Picchu

There are pisco sours all over town, but rarely are they more appropriate than here. After all, this is Peru's patron drink. This sour combines pisco, lime juice, simple syrup, bitters, and frothy egg white.

Here you'll find an entire "Oeuf" section of the drink menu as well as the disclaimer "consuming raw eggs may increase your risk of being held in high regard by the bar." For the Bourbon Derby Flip, a full bodied bar favorite, think next-level egg nog. The cocktail is made with sherry, Four Roses bourbon, and a touch of cream.
