A Massachusetts barbecue catering company with roots in Florida will soon have its own restaurant in Quincy. Bonez Brothers BBQ (657 Southern Artery, Quincy) will open in two weeks, unveiling a takeout-centered menu of barbecue items with a heavy emphasis on alligator, as a nod to owner Todd Noon’s history wrangling alligators in Florida.
Bonez Brothers BBQ took over a former Papa John’s restaurant, which Noon will fill with a custom-built hardwood smoker and decorations of stuffed alligators he’s captured through the years. Noon has barbecue experience from Michelbob’s in Naples, Florida, and previously served as head chef and dietary director for a group of assisted living facilities in the state.
For the last several years, Noon has run Bonez Brothers in Massachusetts, offering catering services and appearing at local farmers markets selling spice rubs, sauces, and various barbecue items cooked in a 17-foot, 7,900-pound hardwood smoker.
Expect alligator to dominate both the menu and the walls at the Bonez Brothers BBQ restaurant. Dishes will include smoky alligator sausage, alligator tail, and alligator fritters, as well as non-reptilian barbecue items like slow-smoked baby back ribs, beef brisket, and pulled pork. For dessert, look for another taste of Florida in the form of key lime cheesecake — deep-fried, of course.
Noon will also showcase a signature menu item called “love in a cup,” which is mostly as it sounds — a 16-ounce solo cup serves as a vessel for layers of pulled pork, barbecue sauce, collard greens, beans, and coleslaw, all topped off with a pickle and more barbecue sauce. Customers will be able to place takeout orders, and the restaurant will have a standing counter inside for those who want to eat on-site.
