A local catering company that specializes in Tex-Mex cuisine begins an extended pop-up in Cambridge’s Inman Square this week. Amanda Escamilla of Tex Mex Eats will take up residency in the former Tupelo space (1193 Cambridge St., Inman Square, Cambridge) starting May 2, serving dinner three nights a week and brunch on Sundays. (Tupelo, a Southern restaurant, closed late last year. Tex Mex Eats has previously popped up at the restaurant and its sister bakery, Petsi Pies.)
“We’re bringing Tex Mex Eats in a bigger and bolder kind of way,” Escamilla told Eater. “The dishes that we hope to focus on are the ones that we do for catering regularly.”
Escamilla, who grew up in Corpus Christi on the Gulf coast of southern Texas, has spent more than 20 years cooking in Boston, much of that time at the now-defunct East Coast Grill in Cambridge. She launched Tex Mex Eats in 2013, and it has become a standby farmers market and catering staple, well-known for its tamales topped with items like fried eggs or chile beans.
While tamales will appear on the menu in Cambridge, Tex Mex Eats will also serve items like grill-roasted pork loin, tostadas, and jalapeno poppers stuffed with queso, wrapped in bacon, grilled, and served with avocado salsa.
“We have some room for creativity, of course, but also we want to bring dishes that you have to travel a long way to get,” Escamilla said.
Diners can look out for other dishes like chilaquiles, which Escamilla said were inspired by a visit to Oaxaca in Mexico, as well as some like ceviche that may feature local proteins like tuna or other seafood. She also plans to prepare mole, a chile-based Mexican sauce.
Tex Mex Eats will also serve beer and wine, with some Mexican brands like Dos Equis and Corona, as well as Jarritos sodas, sangria, and mimosas with brunch. The brunch menu will include breakfast tacos filled with chorizo, eggs, and possibly nopales, or cactus, with hand-made flour tortillas.
For the first month in Inman Square, Escamilla plans to keep a streamlined menu, leaving room for creativity as the pop-up extends for a few months. Tex Mex Eats will offer dinner service from 5:30 to 10 p.m. Thursday through Saturday, with Sunday brunch available from 11 a.m. to 3 p.m.
