Vegan fast casual chain Veggie Grill should finally open its first east coast location in Cambridge this summer, over a year after the California chain announced its expansion to Massachusetts.
Boston Restaurant Talk notes that signage for the chain, which does a mixed bag of burgers, bowls, sandwiches, and soups, has appeared in Harvard Square, with Veggie Grill’s website now listing a summer opening.
It appears to have been slow progress for Veggie Grill, which first announced a location at 57 John F. Kennedy Street last May, with an opening initially slated for fall 2018.
The 40-seat Cambridge location appears to be the first of two eastward expansions for Veggie Grill, which claims to be the largest vegan chain in the country, with a location in New York also on the cards. At present, the restaurant is heavily concentrated around the Los Angeles area, although it also has outlets in Illinois, Washington, and Oregon.
It seems like it may be only the start of potentially big expansion plans for Veggie Grill — last year, CEO Steve Heeley said that the Harvard Square location would likely be the first of many in the Boston area.
