The team behind a popular restaurant in Concord is inching closer to opening up a sibling spot in Back Bay. Owners Ian Calhoun and Vincent Vela, chef Carolyn Johnson, and chef de cuisine Carly Voltero of 80 Thoreau are now in the market for additional kitchen staff to work with them at this as yet unnamed concept, which has been in the works for more than a year.
A job posting calling for two sous chefs to join Johnson and Voltero in the kitchen indicated that the restaurant will focus on New England seafood and seasonal ingredients and that there will be two dining rooms within the restaurant, which will allow the restaurant to produce “menus ranging everywhere from fast & fun world cuisine to elegant tasting menus.” One sous chef will focus on lunch and the other will be on dinner duty. The restaurant will be closed on Sundays, according to the listing.
In September 2015, the team confirmed they would take over the space at 304 Stuart St., a triangular building that was previously home to a location of the Italian takeout spot Viga. At the time, licensing information for the City of Boston indicated the new restaurant would use three floors and a basement, with seating on the third floor, the main kitchen and bathrooms on the second, and takeout and counter service on the first floor.
