A much-anticipated restaurant that specializes in fully vegan fare is almost ready for its Boston debut. By Chloe opens its first Massachusetts restaurant in Boston’s Seaport District on Thursday, February 23, according to Boston Magazine, bringing an array of burgers, sandwiches, salads, and so much more — all vegan — to 107 Seaport Blvd.
Boston’s By Chloe (stylized as by CHLOE.) will feature a number of the restaurant’s signature dishes, including a guac burger topped with tortilla sticks, salsa, chipotle aioli, and guacamole; a pesto meatball sub made with mushroom and veggie meatballs; macaroni and “cheese” with a sweet potato cashew sauce; and a whiskey barbecue sandwich made with mushrooms, seitan, kale, onion marmalade, grilled pineapple, and a bourbon barbecue sauce. There will also be a handful of Boston-specific entrees and desserts.
In addition to the Seaport opening, By Chloe has another location planned for Fenway that is supposed to open in April at 100 Van Ness St.
Update, 2/16 8 a.m.: This piece has been updated to remove references to specific people involved with By Chloe’s menu development due to an ongoing dispute between founder Chloe Coscarelli and partner Esquared Hospitality, leading to conflicting accounts regarding this expansion.
