Bistro du Midi has selected its next executive chef, following the February departure of Robert Sisca to Providence. Josue Louis will step into the role from his previous position as sous chef, which he held for six years while working closely with Sisca, according to a release.
Louis will oversee operations and plans to unveil a new menu in June 2016 that reflects his personal touch and talents as a chef. He is a native of Boston and a graduate of the Culinary Institute of America in Hyde Park. His prior experience includes time at The Fairmont Copley Plaza.
The Provence-inspired menu at Bistro du Midi, located at 272 Boylston St., features delicacies from both land and sea, including crudo, starter plates like pork belly and Spanish octopus, chicken for two, monkfish, and bouillabaisse, among others. The restaurant's desserts include elegant items like Meyer lemon pound cake topped with candied rose petals and rhubarb ice cream.
