A health-centric spot coming soon to Brighton is awaiting its health inspection and will soon be ready to shower the community with plenty of juice blends and salads. Energize could open by May 1 if it's granted all the necessary approvals.
Four friends — Tihomir Deliivanov, Ivaylo Dimitrov, his brother Tsvetelin Dimitrov, and Radomir Stoyanov — moved to the U.S. from Bulgaria in 2008. They experimented with plant-based foods, juicing, and juice blends, as previously reported, and decided to share their knowledge with others.
They worked together to craft a plant-based menu and built up the concept of Energize, which will feature their juices, salads, and smoothies. Deliivanov previously told Eater that they wanted the menu to appeal to all potential customers, not just vegetarians or vegans.
Deliivanov said everything at the cafe is "set and ready to go," and they will open the doors to the newly renovated space at 618 Washington St. as soon as they pass that final inspection.
The juice and salad bar will feature all manner of juices, blends, and salads, along with create-your-own options. It will be open Monday through Friday from 8 a.m. to 8 p.m. and Saturday and Sunday from 9 a.m. to 7 p.m.
