A village-supported brewery in Acton will open its doors grandly on March 9, with all the fanfare and flourish possible. True West kicks off its brewpub business (525 Massachusetts Ave.) at 4 p.m. next Wednesday and will celebrate the occasion with a musket salute, provided by the Boxborough Minutemen Company.
For the first few weeks, the brewery plans to offer dinner from Wednesday to Sunday, adding new days — plus lunch and brunch — as time goes. True West is an expansion of Dover, N.H.'s 7th Settlement brewery and emphasizes the use of seasonal and local ingredients. All food served in the restaurant will be sourced from nearby farmers, growers, fishermen, distillers, and more.
True West's beers will cover a range of styles, including East Coast- and West Coast-style hoppy beers, wheats, Belgians, porters and stouts, and German-style lagers. There will also be a seasonal cocktail list, for any non-beer-inclined patrons.
On the food side, expect homemade sauces, breads, and more on the pub-style menu, which will feature everything from pretzels and pizzas to sandwiches and mac and cheese.
