Cambridge, get ready for some lightning-fast pizza. Blaze Pizza, which specializes in fast-cooked pies, is set to open at 1 Canal Park, near CambridgeSide Galleria, "soon," according to the fast-casual chain's Twitter feed.
Blaze Pizza first hinted at Greater Boston locations in 2012, and then 2014, and it now looks as though this will finally become a reality.
The restaurant first started in 2012, operating with a Chipotle-style counter system, where guests can choose from a lineup of toppings for the made-from-scratch dough base, which is prepared in front of them. The pizza is then fast-cooked in an oven and served up hot.
Blaze's self-described operation works as follows: "blazing hot oven + dedicated pizzasmith + 180 seconds = fast-fire'd, perfectly crisp perfection." The pies are highly customizable, with 36 toppings to choose from and one price.
There are also pre-planned pies, like the meat eater (covered in meat), the art lover (yes, it has artichokes), and the white top (creamy sauce, bacon, and more). Customers can also opt for the salad route, which has six options, or pick up a s'more pie for dessert.
Even LeBron James can get down with this concept, which has dozens of locations across the country and in Canada. Eater has reached out to Blaze for more information on the forthcoming Cambridge restaurant.
UPDATE, 2/22: According to a press release, Blaze will open its Cambridge location in the spring. The 2,700-square-foot space will seat 50, and there will also be a patio. Then, in summer 2016, two more locations are slated to open — 1282 Boylston St. (The Viridian, located near Fenway Park) and 123 Stuart St. (City Place, near Emerson and the Common).
