A local chef known for his bao and dumplings has another new project in the works. Duy Tran will be cooking out of Umbria Prime (95 Franklin St.) for the time being, and he has a set-up primed for "catering and winter experiments," he wrote on Instagram.
Tran has been through a few months filled with change — he briefly took over the kitchen at Monroe in Cambridge’s Central Square before the hybrid restaurant/night club shut down, and he had plans to lead a menu update at Bao Nation, but that hasn’t materialized yet.
With this new concept at Umbria, he will apparently be able to do some daily experiments and demo nights, along with catering functions with up to 150 guests. There will be dinner service and specialty nights, he told a commenter on his post, and lunch service will start next week.
