Chef Shuffles at BISq, Granary Tavern, and Audubon

Where to find Alex Saenz, Dan Bazzinotti, Chris Mendonca, Sergio Salas, and Suzi Maitland these days

A few chef updates around town:

Alex Saenz has stepped in as chef de cuisine at BISq in Cambridge’s Inman Square (1071 Cambridge St.), replacing Dan Bazzinotti, who has departed for the soon-to-open Eataly Boston. Saenz previously worked as chef de cuisine at the nearby Puritan & Company, and he also worked at Lineage in Brookline. Saenz will draw upon his roots in Charleston, SC for updates to the menu at BISq. Keep an eye out for fried chicken buckets, dollar oysters, and whole animal dinners.

Chris Mendonca took over as executive chef of Granary Tavern at 170 Milk St. this month. Mendonca spent time at the Bedford Village Inn in New Hampshire before coming to Boston. He was executive chef for the opening of Parla in the North End, and he has also worked at Menton, Ten Tables, and Scopa.

Sergio Salas is now leading the kitchen at Audubon, following the departure of chef Suzi Maitland to Newburyport to open The Paddle Inn. Salas is a Le Cordon Bleu grad who worked at The Brookline Country Club before joining the Audubon team in 2015 to develop the menu. "We are incredibly lucky to have him," Audubon co-owner J Bellao tells Eater. (Bellao's partners in Audubon, Josh Childs and Beau Sturm, are behind The Paddle Inn, along with Trina's Starlite Lounge and Parlor Sports.)
