Ciro Maione, the owner and proprietor of Domenic's Italian Bakery & Deli in Waltham for 36 years, has a new project in the works. Domenic's Forno is looking to open up at 75-115 Binney St. near Kendall Square in East Cambridge, the newest licensing hearing agenda reveals.
Maione said via email that he "look[s] forward to sharing this exciting concept," but at this point, it's in the "predevelopment stage."
Domenic's in Waltham opened in 1979. On breads baked in-house, it offers a variety of cold and hot Italian-style sandwiches, including Manzo, with garlic roast beef, caramelized onion, gorgonzola, and arugula; Bomba, beef stuffed with marinated hots, provolone, caramelized onions, and more; and a Classic Italian with pistachio mortadella, provolone, and Genoa salami.
It also has specials, like today's slow-roasted barbecue beef sandwich with red cabbage slaw and smoked Gouda, as well as pasta dishes, pizza, salads, appetizers, and soups. Domenic's also caters with half- and full-pans of lasagna, stuffed shells, chicken Marsala, and other classic Italian dishes, plus panini platters.
Maione didn't confirm what Domenic's Forno would offer, though "al forno" typically refers to oven-baked food, so perhaps pizzas, pasta dishes, and breads will be the focus of the Cambridge concept.
Maione is seeking to serve food and non-alcoholic beverages, with the option of opening 7 a.m. - 11 p.m. daily. The spot would have 49 seats inside as well as a 12-seat outdoor patio. The hearing is Tuesday, Sept. 8.
