Sousaku Bistro Gets Closer to Opening in Malden With Foie Gras Risotto, Sweet Shrimp Toast, and Sushi

Sousaku Bistro, a "Japanese tapas" restaurant, is getting closer to opening at 166 Eastern Ave. in Malden; it's now hiring for various front-of-house positions. As previously reported, Sousaku will serve sushi, Japanese-inspired small plates, and more, along with alcohol and bottomless cups of iced green tea.

The restaurant recently added a menu to its website. When Sousaku Bistro opens, diners will find dishes like a sweet shrimp toast with deep-fried mango, spicy garlic edamame, foie gras risotto, lots of sushi, and rice bowls.

Executive chef Wan Chi (Boky) Chu was previously head chef at FuGaKyu. Sousaku Bistro will be open from 5 p.m. to 1 a.m. on weekdays, 11 a.m. to 1 a.m. on Saturdays, and noon to midnight on Sundays.
