Boston's sea of juice bars continues to swell: Livite will open next month in Brookline's Washington Square, reports Wicked Local Brookline. It will be located in the former EuroLine Kitchens space at 1644 Beacon St., and the menu will include panini as well as juice and smoothies, owner Victor Pichardo told the publication, noting that he'll focus on local and organic sourcing when possible. He and business partners Yvan Cardenas and Tomas Checo "have a long history of eating healthy and believing that a healthy lifestyle begins with what you eat," he said, and they found the Boston-area market lacking in healthy options.
The trio has been in the food and beverage industry for over a decade, according to the minutes from a June Board of Selectman hearing. At that meeting, their new shop received approval for a food vendor license, which means that they can only operate as a takeout establishment — no seating. But there may be room for an expanded space in the future, at which point they'd apply for seating.
In nearby Coolidge Corner, Brookline also recently saw the opening of Pure Cold Press Juice & Salad Bar, which serves a kosher and vegetarian menu of juices, sandwiches, soups, salads, and desserts.
