Roxy's Grilled Cheese has two new brick-and-mortar locations in the works, as previously reported, and Boston Restaurant Talk notes that the branch outside Boston could be opening up at MarketStreet Lynnfield.
State records show Roxy's Grilled Cheese Lynnfield LLC intends to move into the development, though BRT notes the listed address — 1215 Market St. — may not be the exact location of the forthcoming shop. Currently, that address is inhabited by a Pinkberry. MarketPlace is a development about 16 miles north of Boston, where city restaurants are expanding at a rapid pace. Davio's, Fugakyu, Temazcal Tequila Cantina, and Wahlburgers have all opened up there in the past year, and a Gaslight outpost is coming soon.
Roxy's launched as a food truck in 2011 and opened up its original brick-and-mortar in Allston in 2014. The business built its reputation on perfectly-browned sandwiches, including the Green Muenster, with guacamole, bacon, and Muenster cheese. The restaurant expanded the menu to include burgers, fries, and poutine.
The two new Roxy's — the Lynnfield location and one somewhere in Boston proper — may or may not have similar items. Owner James DiSabatino previously told Eater that he plans to evolve the brand with every new location, "not just with our food but with our design, physical space, and approach to hospitality, and these spaces will definitely show that."
