Tim and Bronwyn Wiechmann (T.W. Food, Bronwyn) are opening their third restaurant this fall, they announced today. Playska is set to open in September in the former Rosie's Bakery space at 243 Hampshire St. (which, before Rosie's, housed Legal Sea Foods), according to a press release, and it'll be the husband-and-wife duo's first fast-casual venture, specializing in Eastern European-inspired sandwiches with house-made breads, pickles, and condiments.
"Playska" refers to Tim's burger-sausage homage to a Balkan street food, pljeskavica, which he has tested out "Industry Prototype Nights" at Bronwyn in Union Square. There will also be a vegetarian option made of beets and chickpeas. Oat honey challah panini is also slated to make an appearance on the menu, alongside other sandwiches and takeout-friendly items. (There'll be some space for dining in as well.)
