Committee, a new restaurant from George Aboujaoude (Cafeteria, Bijou Nightclub), is eyeing June 15 for opening day, and a representative also reports the Mediterranean spot has brought on Diane Kochilas as a consulting chef.
Kochilas is a native New Yorker with roots in Ikaria, a Greek island known for its inhabitants' long lifespans. She is the author of several cookbooks and hosts a web series on Greek cooking. Kochilas has helped several other North American Greek restaurants develop their menus, including Pylos in New York City and Volos in Toronto. At Committee, the cuisine will be made for sharing, as previously reported.
Beyond the food, there will be a large focus on craft cocktails, with a "convivial speak-easy" vibe. The update today from the restaurant rep elaborates that the drink program will delve into the realm of performance art and that contemporary ingredients will mix with "a splash of Boston nostalgia." The decor will be modern and industrial, and social media has revealed it will feature reclaimed wood from Fan Pier docks as well as a bathroom floor tiled entirely with pennies.
