Bread & Salt Hospitality will soon end its residency at Wink & Nod, and as previously reported, Patrick Enage will take over the kitchen next. The former City Landing chef de cuisine came along with City Landing chef/owner Bill Brodsky, who was recently appointed "chief culinary officer" of Wink & Nod's parent restaurant group, Boston Nightlife Ventures.
Boston Magazine previews Enage's upcoming Southeast Asian concept, dubbed Akinto — Filipino for "this is mine." (He is originally from the Philippines.) The menu will focus on plates meant to be shared, from shrimp bao buns with a curried mussel liqueur to prawns with squid ink lo mein and a Khmer red curry broth. While Enage's menu will officially launch on March 30 and run for a six-month stretch, diners can get a preview on March 20 and 21 while the Bread & Salt team is busy cooking up a Persian New Year feast at the James Beard House in New York.
