Currently slated for a mid-April opening at 19 Third Ave. in Burlington, Osteria Nino is "inspired by the kitchens of Rome," pairing "the best of Italian tradition" with "the bounty of New England," according to the upcoming restaurant's Facebook page. Executive chef Walace Benica is an alum of Tuscan Kitchen and Prince Pizza, and general manager Sam Alberts is a Scampo alum.
The Facebook page also lists a chef named Chris Boswell as part of the culinary team, although it's unclear whether he's serving in a consulting capacity or more of a hands-on role. The Chez Panisse alum is executive chef of the Rome Sustainable Food Project (located in Rome), which Benica visited recently.
Osteria Nino will have a pizza oven and a wood-fired rotisserie, along with plenty of pasta.
