Sousaku Bistro Softly Opens Today in Malden

Time for some Japanese tapas.

A new restaurant in Malden is holding a soft opening today from 5 p.m. to 1 p.m, according to a post on its Facebook page. Sousaku Bistro (166 Eastern Ave.) will serve Japanese fusion dishes tapas-style.

Wan Chi (Boky) Chu serves as executive chef of Sousaku Bistro. A native of Taiwan, Chu graduated from cooking school in 1999 and brings years of experience as a chef to Sousaku, where he will put an "edgy new take on Fusion cuisine." Locally, he's an alum of Fugakyu, starting at the Brookline location and ultimately becoming head chef in Sudbury.

The Sousaku menu consists of hot small plates, like pork gyoza, spicy chicken wings, and edamame, and cold small plates, like kimchi and a tartare trio. There's also salad, soup, sushi, rice bowls, and dessert.

Sousaku Bistro's hours will be Monday through Friday from 5 p.m. to 1 a.m., Saturday from 11 a.m. to 1 a.m., and Sunday from 12 p.m. to midnight.
