An Eastern European-inspired sandwich place will open next week in Inman Square. Playska, the latest project from Tim and Bronwyn Wiechmann — the duo behind T.W. Food in Cambridge and Bronwyn in Somerville — posted notice of its October 29 opening date.
Located in the former Rosie's Bakery space (243 Hampshire St.), Playska is named after the anticipated signature sandwich, which is a play on a Balkan dish called pljeskavica. The sandwich has a beef-and-pork patty on soft pogacha bread, ajvar (a red pepper compote), a cream cheese-based sauce, red onion, and pickled cucumber.
"We wanted to do something new, innovative, exciting, different for us," Tim Wiechmann told Eater in a previous interview. He said with a bar and fine dining already in their wheelhouse, they wanted to pursue something different with Playska: bread-making, sausage-making, and an "Eastern-Europe-meets-Turkey" cuisine. All pickles will be made in-house.
Playska will offer takeout friendly items and some in-house seating.
