Regal Beagle's Stacy Cogswell to Appear on Top Chef

The cast of Top Chef's Boston season has been announced, and one local chef is competing: Stacy Cogswell, executive chef of The Regal Beagle in Brookline. The season premieres on October 15 on Bravo, pitting Cogswell against 15 other chefs from around the country.

Tom Colicchio, Gail Simmons, and Hugh Acheson returns as judges and will be joined by Top Chef All-Stars winner Richard Blais. Lots of local chefs will make cameos, like Barbara Lynch, Jasper White, Ming Tsai, Ken Oringer, Jamie Bissonette, and Todd English, as will local tourist attractions, like Fenway Park and Plimoth Plantation.

Cogswell tells the Globe that she's intensifying the Beagle menu for the fall since the restaurant will get some new attention thanks to the show. Back when she started at the Coolidge Corner restaurant a little over a year ago, Cogswell spoke with Eater about her background and her culinary style. "Working with Susie [Regis at UpStairs on the Square] was probably the best experience of my career," she said. "I learned more from her than school or anywhere else. She's a genius with food. She does everything by hand. Nothing is pre-bought. It was a very intense learning process, and it's what I do here."
