The newest Papagayo opened up for lunch today, commencing the staggered openings of Assembly Row restaurants over the next few months. The Mexican restaurant also has locations in Fort Point, Charlestown, and Downtown Crossing. On the menu: enchiladas, tacos, fajitas, tortas, ceviche (prepared table-side), and the like. Oh, and there are margarita pitchers and nearly 200 tequilas — and tequila snow cones. Next up at Assembly Row, Fuji Restaurant and Legal on the Mystic should open in July.
