HARVARD SQUARE — Harvest's Mary Dumont and her team emerged victorious at last night's pork battle, Cochon555, and the next stop is the national competition in Aspen in June. The other Boston competitors were Michael Scelfo of Alden & Harlow, Josh Smith of Moody's Delicatessen & Provisions, Louis DiBiccari of Tavern Road, and Tim Maslow of Ribelle and Strip-T's. Each chef was tasked with utilizing a whole heritage pig to create an array of dishes, and Dumont's menu included a prosciutto lemongrass pho, pork blood tortellini with confit ears, a bacon and bourbon ice cream sandwich, and more.
