In his regular letter to Food Republic, Tony Maws reflects on his favorite part of the job — the Saturday nights he spends back on the line at The Kirkland Tap & Trotter. "Frankly, working the line is a young man/woman's game requiring muscles and bones that are somewhat more forgiving.
