For the benefit of all restaurant employees and anyone else who happens to regularly start thinking about dinner after 9 p.m., Bronwyn is launching a monthly series called Industry Prototype Night, at which chef Tim Wiechmann will introduce dinners inspired by themes related to Germany and Central/Eastern Europe, all paired with regional wine, spirits, and (ja genau) beers.
The series kicks off December 2 with "street food of the Balkans," according to a press release. It will feature pljeskavica, "a house-made patty made of lamb, pork, and egg pounded thin and served with teff flour pita and garlic yogurt sauce," and a Serbian Rakia cocktail.
Industry Prototype Nights will take place on the first Tuesday of every month during the industry-friendly hours of 9 p.m. to midnight.
