Serious Eats pays a visit — well, six years' worth of visits — to Singh's Roti Shop in Dorchester, a West Indian restaurant (as in West Indies, not the western part of India) that specializes in roti, hence the name. Also popular: doubles, which are chickpea-stuffed fried dough sandwiches, and pholourie, fried dough balls dipped in tamarind chutney. [SE]
