Missing Chris Gould from his days at Uni? Drive a few hours north. Gould left a year and a half ago to move back to his native Maine and open his own place, and now it's almost ready. Central Provisions, located in Portland, is undergoing inspections this week. The focus will be on small plates with international inspiration, and a sample menu hints at a handful of raw seafood dishes, like scallop "carpaccio" and sea bream ceviche. Gould is also really good at cooking with lobster.
In the opposite direction, a noted Maine chef could be making plans to expand down to Boston. Shannon Bard is chef/co-owner of Zapoteca in Portland, Mixteca in New Hampshire, and an upcoming restaurant back in Portland. (She also cooked at the James Beard House in New York just last night.) In November, Bard told the Portland Press Hearald that she has her eye on Boston for future expansion, although it won't be exactly the same as either of her existing restaurants because she doesn't want to create a chain.
