Michael Leviton (Area Four, Lumiere) appeared on WBUR's Here & Now radio show last week to speak about how cheap food "is actually killing us." While he tries to run his restaurants sustainably and with locally sourced foods, it's a balance with "accommodating demands for exotic foods" that diners assume are always available.
