Craigie on Main's Tony Maws will open his new restaurant, The Kirkland Tap & Trotter, on Monday, Boston.com's Restaurant Hub blog reports. When Eater spoke with Maws a little over two weeks ago, he estimated that it'd be three weeks, so things appear to be on schedule, and the restaurant has been sharing some photos of the progress on Facebook.
Maws previously told Eater that he's "not doing anything groundbreaking" but wants to make food that's "just good" with a lower price point than Craigie (and no tasting menus). But if you're looking for his signature use of whole animals, that'll be there. "Gonna be heads, gonna be feet, gonna be snouts," he said. He gave Boston.com a few examples of potential dishes, all grilled: spice-crusted chicken wings, a red chile salmon head, and sardines Provençale, plus "funky wines."
Dinner service begins at 5pm next Monday at the newest addition to that funny little corner between Harvard, Inman, Union, and Porter. (Someone on Facebook has been trying to make "KirWaBea" a thing — Kirkland, Washington, Beacon — but please don't.)
