Welcome to the Untouchables, an Eater video series that highlights cult dishes that are practically synonymous with the establishments that serve them. They are dishes that persist through menu changes, that patrons return to again and again, that chefs can't remove for fear of revolt.

In this edition, Hungry Mother's Barry Maiden talks about his signature cornbread, a "real Southern cornbread" topped with sorghum butter. Maiden discusses how he sources the ingredients and prepares the popular dish. "I probably wouldn't be working here anymore — if the cornbread went away, I'd go away with it," says Maiden.
