Olde Magoun's Saloon chef Howard Haywood is not only offering a Greasy Spoons Week special dish at the Saloon — he has also created something at Copper House Tavern in Waltham, where he consults.
Haywood's California Po Boy features blackened chicken with pepperjack cheese, avocado, applewood bacon, tomatoes, and chipotle ranch dressing, served on a fresh thick-cut baguette with a side of fries and house-cured pickles. It's available for lunch and dinner through Sunday, July 21st ($12). The dish is inspired by Haywood's background eating at diners. He wanted to create "a comfort food sandwich with a real burst of flavor."
