It's time to introduce another one of the special dishes made by chefs around town who are celebrating Greasy Spoons Week. Kevin Long, executive chef at Empire, is offering a Griddled Cheeseburger Bao — ground wagyu beef, "good old American cheese," gem lettuce, and Japanese mayo ($12). It's available by request during normal business hours all week.
"I have a healthy obsession with burgers and especially the show 'Burger Land,'" says Long. "In my opinion the best burgers are cooked on a flat grill, smothered in shaved onions, salt, and black pepper. This we made more for fun in the kitchen at lunch time, and it's right on. Crisp lettuce, buns buttered after being steamed — super tender and just enough to keep the burger together. Great for greasy spoon fans looking for an Asian twist and upscale alternative."
