New Restaurant From Oleana Team Will Be Called Sarma

The upcoming Somerville restaurant from the team behind Oleana and Sofra, including chef Ana Sortun, will be called Sarma. Boston Magazine food editor Leah Mennies casually drops that intel in a feature that nerds out on the spice rack at Oleana. A transfer of license posted by the city of Somerville confirms that Sarma is indeed the name of the restaurant headed for the space that was formerly The Paddock. And just what is a sarma? The name appears to refer to the Turkish dish of stuffed cabbage or grape leaves comparable to dolmas. Mennies quotes Oleana chef de cuisine Cassie Piuma, who will be chef and co-owner of the new venture, as saying the menu will be something like "Middle Eastern dim sum."
