To-go grilled cheese purveyor Cheeseboy is indeed making the jump from food courts and kiosks to an actual brick and mortar restaurant. The Charlestown Patch confirms news that has been rumored since last October, saying Cheeseboy is moving into a 1,200 square foot space at 280 Washington Street in Downtown Crossing, which is the former home of clothing store Thomas Pink. According to a press release, Cheeseboy says the new venue will have eight sandwiches - made with "bakery crafted breads"- plus other customizable options, soups, snacks and desserts. Expect a spring opening. Spring is now, so it could be soon.

In other grilled cheese restaurant news, food truck Roxy's Grilled Cheese is also opening a brick and mortar, in Allson. Let the speculation that grilled cheese restaurants are the new cupcake-burgers begin.
