Bronwyn Starts Serving Riesling Sauerkraut on May 15

A representative for the upcoming Union Square restaurant Bronwyn shares an official opening date: May 15. At first, Bronwyn will do dinner only, and then brunch and "late-night sausage" will be added as well. Reservations will be accepted started May 11. Bronwyn is a project of Tim and Bronwyn Wiechmann of the Cambridge hit T.W. Food, and their new restaurant wil feature a menu of Central and Eastern-European cuisine including breads, appetizers, sausage, noodles, entrees, side dishes and desserts. Of course, grain for breads will be milled on the premises. Chef tim Wiechmanns shares a statement with the press, saying "We're incredibly excited to bring BRONWYN and the flavors of my ancestral cuisine to Somerville, and are really looking forward to being part of this dynamic and flourishing community." Sample Dishes:

· Sour, chewy giant pretzels with sea salt flakes
· Hand-twisted Bavarian sausages
· Dark beer soup with aged cheddar kreplach (dumpling)
· Foie gras knish with potato, prune, and hazelnut
· Spatzle with emmenthaler, onion, asparagus, and verbena
· Bavarian roast chicken with citrus-pineapple cure and grilled red cabbage
· Veal "Jagerschnitzel" with foraged mushrooms and walnut
· Riesling sauerkraut

Drink Program:

Ten beers will be served on tap with more available by the bottle, including selections of lager, pilsner, hefeweizen, and seasonal beers. The wine list will feature "rarely exported varietals from the ancient vineyards of Germany, Austria, and the hills of the Alto Adige of northeast Italy." Cocktails will emphasize Central and Eastern European spirits, and apparently there will be "rare schnapps derived from fruit of the valleys and forests of Austria and Germany."

Decor:

Expect hand-stitched embroidered panels, copper reliefs, 100-year old handmade gothic chairs with velvet cushions; slatted wooden tables, and salvaged zinc bar, which the staff polished themselves. And here's the best part: Tim Wiechmann built the biergarten tables himself from tree stumps that he and Bronwyn collected on the beaches of Maine. Also, some iron chandeliers from Tim's German great-grandparents.

Hours:

Dinner: daily from 5 PM to 11:30 PM
Bar: daily from 5 PM to 1 AM
Biergarten: daily 5 PM to midnight, weather permitting
