A new video from America's Test Kitchen shows four prominent Boston area chefs extolling the virtues of the pressure cooker. Tony Maws of Craigie on Main, Jody Adams of Rialto and Trade, Mary Dumont of Harvest and Dante de Magistris of dante all have nothing but love for the machine. Maws, clad in a "Got Bacon?" shirt, recalls his dad using one for artichokes, saying "It was the 70s - dip them in mayonnaise and life was good." Adams briefly impersonates the sound of the steam release, and nearly all the chefs address the dreaded blowing up factor, saying don't worry, it's not going to happen. America's Test Kitchen, which is based in Brookline, also has a book called Pressure Cooker Perfection due out in March.
