Union Square cocktail hotspot Backbar has joined the growing ranks of Boston bars and restaurants serving ramen, which, by a poll so informal it hasn't actually been conducted in any way, is currently the most sought-after food in Boston! Bar manager and co-owner Sam Treadway tells Eater that ramen is now being served from 4PM to 6PM every day except Tuesday (only because Backbar is closed then).
What kind of ramen is available? Chef Tse Wei Lim of the adjacent and affiliated Journeyman has allegedly spent months creating what Treadway says is "the best ramen in Boston." The broth is a combination of pork and duck stock and is flavored with miso and soy. Noodles are made anew each day and are served with shredded pork, "runny" duck eggs, scallions, and bamboo shoots. Add-ons include kimchee, garlic, yet more noodles, bacon, or, if bacon is too lean, straight up pork lard. Here's the kicker: due to limited availability of the fresh noodles, the bar will only serve 10 orders each day. They clock in at $12 a bowl. Good luck waiting the excruciating next five hours before trying to snag some.
