The Roxy's Grilled Cheese food truck is on track to open its upcoming Allston brick-and-mortar location in late January, reports Boston.com's Restaurant Hub. Located at 485 Cambridge St., it'll have neighbors like Lone Star and Deep Ellum, Root, and FoMu. (The latter two are completely dairy-free. If you're craving grilled cheese while your friend is craving vegan ice cream, your wish will soon be granted with a visit to Allston's Union Square.)
Owner James DiSabatino told Boston.com that he will be "getting out of [his] comfort zone a little bit" and serving up some non-grilled cheese options as well. Meanwhile, Roxy's has been popping up at backbar over in the other Union Square this month, serving grilled cheese on Tuesday nights from 5pm-10pm, a night backbar is traditionally closed. It's happening again tonight.
