Rachel Klein IN at Liquid Art House

The Liquid Art House restaurant/gallery project, which has been in the conceptual works for over a year, is still happening, as reported last week. But the 215-seat restaurant will have to shut down earlier in the evenings than owner Ruta Laukien had hoped; the board denied her request for a 1am closing, instead allowing 11pm Sunday through Thursday and 12:30am on Fridays and Saturdays.

Chef Rachel Klein (Mandarin Oriental, Aura, OM) is now officially involved with Liquid Art House, which, according to earlier reports, will feature a "mix of different cuisines," including some influences from Laukien's native Lithuania. "It's an incredible project," Klein tells Eater, and she's "excited to be involved." A tipster sent in an early draft of the menu that was presented to the Boston Licensing Board; get ready for borscht, lobster beignets, and a fancy version of steak and eggs. (The latter two were hallmarks of her menu at the Mandarin Oriental's Asana.)

· Scarlet borscht: Sweet and sour beets, sour cream, pickled pearl onion, pee-wee potatoes, dill, cilantro ($11)
· Young greens: Torn herbs, sherry vinaigrette, tiny tomatoes, shallot ($9)
· Lobster beignets: Corn, smoked chili aioli, Chinese sausage, pea tendrils ($15)
· Smoked sable: Vinegar potatoes, crime fraiche, radish, pickled onion, brown bread ($17)
· Lamb cavatelli: Braised lamb, spiced olives, Muscat grapes, herbs ($16/$28)
· Jack's Mamaliga: Creamy anson mills ground corn, wild mushrooms, sherry cream sauce, chive ($14)
· Crispy artichokes: Garlic confit, coriander emulsion, parmesan ($14)

· Steak and eggs: Filet mignon, potato purée, baby hand picked vegetables, sauce bordelaise, truffle fried duck egg ($42)
· Arctic char: Pumpernickel crust, Brussels sprouts, fingerling potato, garlic milk ($30)
