A new book called Back of The House: The Secret Life of a Restaurant profiles Cambridge favorite Craigie on Main from the perspective of the book's author, psychologist Scott Haas. Grub Street shares a teaser for the book, due out on February 5, that says Haas was granted open access to the inner workings of Craigie by chef-owner Tony Maws for one and half years, warts and all. Hass acted as "a fly on the wall," observing interactions that he describes as "unpleasant," though the experience seems to have left the author full of awe. The video makes much of the open access given by Maws, saying that the chef never asked to see what Haas had written beforehand, which could serve as a refreshing antidote to the heavily doctored narratives so familiar on chef-themed reality TV shows.
