Michael Navarrete has replaced chef Laura Henry-Zoubir at The Regal Beagle in Coolidge Corner and will soon be implementing new dishes as part of his fall menu. Navarrette joined the kitchen earlier this summer and has previously worked in the kitchen of San Francisco chef Gary Danko, whose restaurant also happens to be called Gary Danko. Locally, Navarrette has cooked at Sorellina, Rustic Kitchen, the South End Buttery and Cafeteria and also did five years at Hamersley's Bistro. His upcoming fall menu, which should go into effect in early October, includes appetizers like grilled pork confit with apple-pear kimchee and lentils and entrees such as braised lamb with black beans with sweet potato puree and sour orange crema as well as scallops with butternut squash "steak" au poivre, grilled leeks, and a tart apple jam.
