A new video depicts the offal-centric bromance between local chef Jamie Bissonnette of Coppa and Toro and visiting chef Chris Cosentino of Incanto in San Francisco as they eat, drink, hug, high-five and hurt each other at some of the city's hottest dining venues. The video, put out by appliance maker Breville, follows the tattooed, chunky glasses-clad chefs as they visit jm Curley in Downtown Crossing for smoked beef heart crostini and porchetta Cuban sandwiches - "That place was killer" - and Barbara Lynch's The Butcher Shop in the South End for hot dog de la maison - "She's on it hard core."
At Toro they go for porros de cava, corazon (heart), mollejas (sweetbreads), cod tripe, navajas a la plancha (razor clams) and tuna conserva, and at Island Creek Oyster Bar its the shellfish platter and, of course, Fernet Branca - "This is owned by an oyster farmer - how cool is that?" Clearly the two deeply respect and influence one another, but when Cosentino says "Jamie's going to push me to push myself" he probably doesn't mean it literally: shortly after, he gets whacked in the balls, which, for the record, count as offal. "Touchdown!" proclaims a triumphant Bissonnette.
