Chris Gould Leaves Uni, Will Start a Portland Restaurant

Lobster master Chris Gould has been instrumental to the success of Uni, the sashimi bar at Clio, which is why the venue is sometimes referred to as "Uni Sashimi Bar by Ken Oringer & Chris Gould." But he's gone. Yesterday the Portland Press Herald reported that Gould left Uni "last week" and now plans to open his own restaurant in Portland, Maine, which is of course already home to the legendary Miyake, considered to have one of the best omakase offerings in the Northeast. So will Gould, a Maine native, be heating up the Portland sashimi scene on Miyake's home turf? Hard to say - the Herald only says that Gould plans to do "internationally inspired small plates." Expect a spring opening.
