CAMBRIDGE- On July 11th, Craigie on Main hosts its fifth Whole Hog Dinner. Chef Tony Maws orders hogs direct from Vermont farmers and will serve up "a six-course dinner of all the porcine pleasures," which tentatively includes salad of cured pork and plums with lardo, guanciale, and smoked heart and slow roasted pig neck “Dijonaise.” [Official site]
