The Brahmin has announced that Sonsie alum Matt Spencer is in as its new executive chef. Spencer is a Boston native and a Le Cordon Bleu, Orlando grad who spent some time at Clio and working at a Disney resort. Spencer says his vision for the restaurant's menu will pair high-end ingredients with approachable presentations. He's made some changes, including asparagus and Parmesan fries, fried pickles, flash-fried shisito peppers and tuna two ways. One way: with melon. The other way: tartare, wasabi aioli and toast points.
