The Painted Burro has announced an opening date of March 19 in the Davis Square location that was formerly Gargoyles on the Square. The restaurant will be operated by chef-owner Joe Cassinelli, who also runs the nearby Pizzeria Posto, and will seat 80 plus 14 at the bar. Mistral alum Dante Bua will serve as executive chef, overseeing dishes inspired by the cuisine of Mexican regions such as Baja, Oaxaca, Vera Cruz and the Yucatan plus some South American offerings. For instance, tacos made with lamb neck and apricots, grilled chicken livers as well as ceviche and rabbit leg cazuela.
We're also told that a late night taco menu will also be available from 10pm to midnight. The bar, which is made in part from reclaimed timber beams, will pour from 100 varieties of tequila, which will be available in 2 oz. tastings, cocktails, and regionally-themed flights. Beer will be served in paper bags.
