The upcoming Spoke Wine Bar, bound for Davis Square, has announced a bartender: Paul Christie, who previously tended bar just across the square at the former Gargoyle's. That restaurant was once helmed by chef Jason Santos of Blue Inc., the show Hell's Kitchen, and another yet-unnamed restaurant headed for the Theater District. Meanwhile, Spoke Wine Bar comes from the owner of beloved neighbor noodle maker and sandwich shop Dave's Fresh Pasta and Felisha Foster, the former wine buyer for Dave's. Spoke may open as soon as this time next month and has also announced that No. 9 Park alum John Paul daSilva will be heading up the kitchen: not too shabby. Spoke shared the news of Christie's hire via Facebook. Since Gargoyle's closed last year Christie writes that he's been working on his two boutiques, Davis Squared and Arlington Centered, which he owns with his wife.
