The Painted Burro Enters Cocktail Testing Phase

The Painted Burro is slated to open in February in the former Gargoyles on the Square space in Davis Square, says chef-owner Joe Cassinelli, who also runs the nearby Pizzeria Posto. For now, the Burro is enjoying the cocktail testing phase. The Oaxaca-inspired restaurant has posted photos on Facebook showing its mixologists at work preparing a "spicy passion fruit and tequila cocktail" (kudos to them for not stretching the already exhausted definition of the margarita). Cassinelli tells Eater that the drink menu "will feature an abundant selection of premium tequilas as well as a strong showing of rums," and Facebook photos also give us a preview of dishes like camarones diablos and grilled ham steak in roasted garlic mojo. The restaurant plans to serve food until 12am will feature a special taco menus "where the chefs will really get a chance to have some fun."
